For Thanksgiving, I made my Pumpkin Brown-Butter cupcakes. In the middle of dessert, in between 2 tables of people, I pulled out my chair and rested one of the cupcakes on it so I could show you guys a picture of one.
And that’s a picture of my little girl, Evie. How adorable is that dress?! She was so sweet looking she almost made my teeth hurt. Luckily, I have quite a tolerance for sweet things.
I topped the cupcakes with cool whip instead of frosting because I’m still out of meringue powder, but it worked really well! It tasted just like pumpkin pie.
Speaking of Cool Whip, have any of you guys seen that commercial for Reddi-Whip where the woman is at a diner and the waitress goes through a ton of this or that questions, and when she gets to the cool whip/reddi-whip, she asks, “cream or oil”? Has anyone else realized that oil would probably taste better? Butter is almost the same thing, being a lipid and all.
I don’t like how they tried to turn a Cool Whip into something terrible with that commercial. I mean, I understand people need to watch how much fat they put in their diet, but cream has a ton of fat in it too. What if the oil in the Cool Whip is a low fat kind?
In fact, I looked it up just now. Reddi-Whip’s fat content is 2 grams per 10 gram serving and Cool Whip’s fat content is 2 grams per 10 gram serving.
Both servings have 25 calories.
25 calories doesn’t seem like much when you’re putting it on a piece of pie. You’re eating something pretty chock full of calories to begin with; I don’t think an extra 25 is going to kill you.
So there it is folks. Reddi-Whip was calling the kettle black. That wasn’t very nice of them.
And yes, I dissect every commercial this way. I’m a skeptic by nature.

I apologize for the lack of updates recently, and I know I’ve been annoying with the “vote” posts, but that was all I really could manage because I was working on Evie’s costume for the past week. (Today is also the last day to vote, so hook a girl up!)
Last night our little village of Sloan had their trick-or-treating which worked out well since I was able to post this today. Look at my cute little girl! She had a blast last night and was allowed to stay up way past her bedtime to eat a bunch of candy. As I type this, I’m waiting for her to nap to recover from the night.
She is obviously a cupcake even though Eric insisted she looked like an ice cream cone. I understood his logic though. If I would have made the frosting any other color, there would have been no denying her cupcake-ness, but alas, I only had white sponge to work with.
Most of the people on the street knew she was a cupcake, but there were a few that said, “Aw! Look at the cute little ice cream cone!”, but I corrected them and then would look at Eric because I knew I’d see an I told you so smirk on this face. (Which was fine, because every time someone said “Look at the cute cupcake!” I gave him one.)
The best part of the evening was me asking Evie if she was cold, and her responding with, “No! I’m a cupcake!” It was so cute it was almost unbearable. Almost.
She was a trooper though. The costume might look like it was uncomfortable, but it was like a wind-resistant fort around her and even while walking around in 40 degree weather she was perfectly fine. After every house she would look at me and ask, “More houses?” and how could I deny her? That little girl, with her little two year old legs, walked around for two solid hours and didn’t complain once.
A special thanks goes out to my mom for helping me make the costume. She provided the support beams underneath and the materials to construct it. I simply decorated it. (And my house is infected with the glitter to prove it.) People kept asking us where we bought it, so it must have turned out pretty well! (I think so, but if Evie is involved, I always think it’s perfect.)

This is my little angel, Evie. She is my entire world. She’s the reason I started this little baking adventure. As silly as it sounds, I taught myself how to decorate cakes mostly because I wanted to make sure that she had the prettiest cupcakes possible to take to school on her birthday.
She is everything that matters in this world; without her, I wouldn’t be the person I am today.
So thank you, Evie, for being the silly, loving, intelligent, independent little girl that you are. I hope you are always true to your heart. I’ll love you until the end of time. Thank you for making me the happiest Mommy in the world.
If anyone remembers, remind me to make her read this in 16 years.

This is the cake I made for my daughters birthday yesterday. She turned 2 today! (I can’t believe shes 2!). Everything on the cake is edible. Including the Spongbob I made out of fondant.
The cake was brown sugar pound cake (even the pineapple was cake), with vanilla buttercream icing and vanilla flavored fondant. Evie doesn’t really like sweet things, so I tried to make it as non-sugary as possible.
It turned out amazing too! So yummy.
